Fresh fruit salad - sweet, crunchy, creamy and delicious Spring is apparently officially here. I'm watching the snow come down, but also reminding myself that the vernal equinox has occurred, our clocks have sprung forward and the days are definitely getting longer. Only a matter of time! With summer a few months away, this is a perfect time to swap those rich desserts for an easier, healthier option. Here's a recipe that triples as a dessert, breakfast or mid-afternoon snack. You'll need 1 apple, 1 large navel orange, 1 banana, a couple of strawberries and some toppings. Clean/core/peel the fruits, slice/dice into bite-size pieces and combine in a large mixing bowl. Next, add the piece de resistance -- the toppings -- toss in some chopped walnuts, 1-2 tablespoons of honey and some whipped cream (fat-free works great). The amount of each really depends on your taste, but resist the temptation to add too much. Mix carefully (but thoroughly) to retain the texture of the whipped cream and transfer to dessert/cereal bowls. This recipe makes 2-3 servings -- which is a good thing, because you'll most probably go for seconds and thirds. Eat up! |
