Low-fat option for your Super Bowl party I know, I know. Super Bowl just ain't the same without a heaping plate of greasy chicken wings (with those neglected carrot and celery sticks to complement). But if you're in the mood for a slightly healthier option this year, or want to break out an additional platter, here's a recipe that is relatively low in fat and high in taste. Try it: Cut 4 boneless skinless chicken breasts into big bite size pieces. At 6-7 pieces per breast, you should end up with around 25 pieces. Next, in a clean bowl, create a marinade with chopped garlic, chopped ginger, chili powder (or red chili flakes), powdered cumin, powdered cinnamon, chopped fresh cilantro, lime juice, crushed/powered black pepper and salt. The quantities of these ingredients really depend on your taste, but 2 teaspoons of each should be a good bet if you have no preference. Add more chili powder if you want to make the dish spicy. Optionally, add a dab of honey (adding more will confuse your guests rather than surprise). Throw in the chicken pieces and mix thoroughly to coat and set aside for 15 minutes. Next, heat up some oil in a wok or a saute pan and drop in the marinated chicken pieces, stirring periodically on high heat until the pieces are evenly browned on the outside and fully cooked on the inside (should not be pink on the inside). Sprinkle some chopped cilantro, give the ingredients another toss and transfer to a serving platter. Place party picks on each piece and pass around the room ... |
